4 large bell peppers (colors of your choice)

1 lb ground beef (or turkey for a healthier option)

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup salsa

1 tablespoon taco seasoning

1 cup shredded cheddar cheese

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Lime wedges (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Drizzle the insides with a little olive oil and place them upright in a baking dish.

      Cook the Meat: In a large skillet over medium heat, heat the olive oil. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

        Mix the Taco Filling: Once the meat is browned, stir in the cooked rice, black beans, corn, salsa, taco seasoning, and half of the cheese. Cook for another 5 minutes until everything is heated through and well combined.

          Stuff the Peppers: Spoon the taco filling generously into each prepared bell pepper, packing it down slightly. Top each stuffed pepper with the remaining cheddar cheese.

            Bake the Peppers: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. Remove the foil and bake for another 5-10 minutes or until the cheese is bubbly and the peppers are tender.

              Garnish and Serve: Remove from the oven and let them cool slightly. Garnish with fresh cilantro, and serve with sour cream and lime wedges, if desired.
