2 cans (15 oz each) chickpeas, drained and rinsed

1 cup coconut milk

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, diced

1 zucchini, diced

1 cup cauliflower florets

2 cups spinach (fresh or frozen)

1 can (14 oz) diced tomatoes

2 tablespoons curry powder

1 teaspoon turmeric

1 teaspoon cumin

1/2 teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Cooked rice or naan for serving

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices: Sprinkle in the curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for another minute to toast the spices, which enhances their flavors.

      Incorporate Vegetables: Add the diced red bell pepper, zucchini, and cauliflower florets to the pot. Stir well to coat with the spices and cook for about 5 minutes, allowing the veggies to soften slightly.

        Chickpeas & Tomatoes: Add the rinsed chickpeas and diced tomatoes to the pot. Pour in the coconut milk and stir everything together. Bring the mixture to a gentle simmer.

          Simmer & Season: Reduce the heat to low and let the curry simmer for 15-20 minutes, stirring occasionally. This will help develop the flavors. Season with salt and pepper to taste.

            Add Spinach: Just before serving, stir in the fresh or frozen spinach, letting it wilt in the hot curry for about 2-3 minutes.

              Serve: Remove from heat and garnish with fresh cilantro. Serve hot over cooked rice or with warm naan for a delightful meal.
