Creamy Garlic Chicken and Spinach Pasta

12 oz (340g) pasta of your choice (fettuccine or penne works well)

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

4 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

1 tablespoon lemon juice (optional)

Fresh parsley, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Prepare the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken strips with salt and black pepper. Add the chicken to the skillet and cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Make the Cream Sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

            Combine Everything: Add the cooked chicken back to the skillet, then toss in the drained pasta. If using, add the lemon juice for a zesty touch. Toss everything together until well coated.

              Serve: Taste and adjust seasoning with salt and pepper if necessary. Serve hot, garnished with freshly chopped parsley and additional Parmesan if desired.
