Ingredients

4 salmon fillets (about 6 oz each)

1 cup heavy cream

1/2 cup Greek yogurt

2 tablespoons fresh dill, chopped (plus extra for garnish)

Zest and juice of 1 lemon

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 tablespoon capers, optional

1 lemon, sliced (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: Lightly grease a 9x13-inch baking dish with olive oil.

Make the Creamy Sauce: In a medium bowl, whisk together the heavy cream, Greek yogurt, dill, lemon zest, lemon juice, minced garlic, Dijon mustard, salt, and pepper until smooth and well combined.

Place the Salmon: Arrange the salmon fillets in the prepared baking dish. Pour the creamy sauce evenly over the top of the salmon.

Add Toppings: Scatter the cherry tomatoes and capers (if using) around the salmon in the baking dish.

Bake the Dish: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve and Garnish: Once cooked, remove from the oven and let it cool slightly. Garnish with additional fresh dill and lemon slices before serving.

Enjoy: Serve the creamy lemon dill salmon bake with your favorite sides, such as steamed vegetables or rice.
