Creamy Peanut Sesame Noodles

8 oz (225g) rice noodles or soba noodles

1/2 cup creamy peanut butter

1/4 cup soy sauce (or tamari for gluten-free)

2 tbsp rice vinegar

2 tbsp sesame oil

2 tbsp honey or maple syrup

2 garlic cloves, minced

1-inch piece of fresh ginger, grated

1/4 cup water (more if needed for thinning)

1 cup shredded carrots

1 cup cucumber, spiralized or julienned

1/4 cup chopped scallions (green onions)

1/4 cup chopped cilantro (optional)

Sesame seeds, for garnishing

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the rice noodles or soba noodles and cook according to package instructions until al dente. Drain, rinse under cold water, and set aside.

    Prepare the Sauce: In a medium mixing bowl, combine the creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger. Whisk together until smooth. Gradually add the water and continue to whisk until you reach your desired consistency.

      Combine: In a large bowl, add the cooked noodles, shredded carrots, cucumber, and half of the chopped scallions. Pour the peanut sauce over the noodles and toss until everything is evenly coated.

        Taste and Adjust: Taste the noodles and adjust seasoning if necessary. If the sauce is too thick, you can add more water to thin it out. For more acidity, add a splash of rice vinegar.

          Garnish and Serve: Divide the creamy peanut sesame noodles among serving plates. Top with the remaining scallions, chopped cilantro (if using), and sprinkle sesame seeds on top for an extra crunch.
