Crispy Chicken Avocado Wraps

2 large boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup breadcrumbs (panko recommended for extra crispiness)

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil (for frying)

4 large tortillas (whole wheat or flour)

1 ripe avocado, sliced

1 cup fresh spinach leaves

1 medium tomato, diced

1/2 cup shredded cheese (cheddar or mozzarella)

Your favorite dressing or sauce (ranch, chipotle mayo, etc.)

Instructions
 

Marinate the Chicken: In a mixing bowl, pour the buttermilk over the chicken breasts. Add a pinch of salt and pepper. Cover and let marinate for at least 30 minutes (or up to overnight in the fridge) to tenderize the chicken.

    Prepare Breading Station: In three separate shallow dishes, set up your breading station: one with flour; the second with a mixture of breadcrumbs, paprika, garlic powder, onion powder, and a pinch of salt and pepper; and the third empty for the dipping process.

      Coat the Chicken: Remove the marinated chicken from the buttermilk, allowing any excess to drip off. First, coat the chicken in flour, making sure it’s well covered. Next, dip into the empty dish, shaking off the excess. Finally, press the chicken into the breadcrumb mixture, ensuring it's fully coated.

        Fry the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts. Cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and drain on paper towels.

          Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a few spinach leaves in the center, then top with sliced avocado, diced tomato, shredded cheese, and two pieces of crispy chicken. Drizzle your favorite dressing over the fillings.

            Roll Them Up: Starting from the edge closest to you, fold the bottom of the tortilla over the filling, then fold in the sides. Continue rolling tightly until you have a sealed wrap. Repeat with remaining tortillas and fillings.

              Serve: Cut the wraps in half on a diagonal if desired and serve immediately with additional dressing on the side for dipping.
