1 lb (450g) beef sirloin or tenderloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

8 oz (225g) mushrooms, sliced (button or cremini)

1 teaspoon paprika

1 tablespoon Worcestershire sauce

1 cup beef broth

1 cup sour cream

Salt and pepper to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Prepare the Egg Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef in a single layer and sear for about 2-3 minutes per side until browned but not fully cooked. Remove the beef from the skillet and set aside.
