Ingredients

2 cups rotini pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup broccoli florets (fresh or frozen)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the bite-sized chicken pieces. Season with garlic powder, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until the chicken is golden brown and cooked through.

Add Broccoli: If using fresh broccoli, add the florets to the skillet about 2 minutes before the chicken is done to lightly steam them. If using frozen broccoli, add it directly to the skillet after the chicken is cooked and cover for 3-4 minutes, allowing it to steam through.

Make the Alfredo Sauce: Reduce the heat to medium-low. Pour the heavy cream into the skillet with the chicken and broccoli, stirring to combine. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Let it simmer for 2-3 minutes until slightly thickened.

Combine Everything: Add the cooked rotini pasta to the skillet, tossing gently to coat the pasta in the creamy Alfredo sauce. Cook for an additional 2 minutes to heat everything through. Adjust seasoning with more salt and pepper as needed.

Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately and enjoy your Easy Chicken Alfredo Skillet!
