1 onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup salsa (mild or medium, based on preference)

1 cup cooked rice (white or brown)

2 cups shredded cheddar cheese

1 cup crushed tortilla chips (plus extra for topping)

1/4 cup fresh cilantro, chopped (optional for garnish)

1 avocado, diced (optional for serving)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground beef (or turkey) along with the diced onion. Cook for about 5-7 minutes, until the meat is fully browned and the onions are soft. Add the minced garlic and cook for another minute until fragrant.

      Add Seasoning: Stir in the taco seasoning and let it cook for another 2 minutes, combining thoroughly with the meat and onions.

        Combine Ingredients: In a large mixing bowl, combine the cooked meat mixture, black beans, corn, salsa, cooked rice, and 1 cup of the shredded cheddar cheese. Mix well until everything is evenly distributed.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips to create a base layer. Pour the taco mixture over the chips and spread it evenly. Top with the remaining crushed tortilla chips and sprinkle the remaining 1 cup of shredded cheese on top.
