1 lb (450g) boneless chicken breasts, sliced into thin strips

2 tablespoons olive oil

3 fresh jalapeños, sliced (seeds removed for less heat, if desired)

1 medium red onion, thinly sliced

1 medium green bell pepper, sliced

1 medium red bell pepper, sliced

4 cloves garlic, minced

Juice and zest of 2 limes

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Tortillas (flour or corn, your choice)

Optional toppings: sour cream, avocado slices, shredded cheese

Marinate the Chicken: In a large bowl, combine sliced chicken, 1 tablespoon olive oil, lime juice, lime zest, smoked paprika, cumin, chili powder, salt, and pepper. Mix well and let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for maximum flavor.

    Prep the Veggies: While the chicken marinates, prepare the veggies. Slice the jalapeños, red onion, and bell peppers and set them aside.

      Cook the Chicken: In a large skillet or cast-iron pan, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the marinated chicken strips to the skillet in a single layer.
