1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 cup spinach or mixed greens

1/2 red onion, thinly sliced

For the Lemon Herb Dressing:

1/4 cup Greek yogurt or tahini (for a vegan option)

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 teaspoon honey or maple syrup

Salt and pepper to taste

Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, oregano, salt, and pepper.
