2 cups cooked chicken, shredded or diced

2 cups mixed vegetables (carrots, peas, corn, and green beans), fresh or frozen

1 cup cooked rice (brown or white)

1 cup cream of chicken soup (or homemade)

1/2 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tablespoons olive oil (for the breadcrumbs)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Casserole Base: In a large mixing bowl, combine the cooked chicken, mixed vegetables, cooked rice, cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese, garlic powder, onion powder, thyme, salt, and pepper. Stir until all ingredients are well incorporated.

      Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

        Prepare the Topping: In a small bowl, combine the breadcrumbs and olive oil. Mix well until the breadcrumbs are evenly coated. If desired, stir in some additional cheddar cheese.
