Instant Pot Creamy Tomato Basil Soup

Ingredients
  

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 (14.5 oz) cans diced tomatoes, with juices

2 cups vegetable broth (or chicken broth for non-vegetarian)

1 teaspoon dried oregano

1 teaspoon sugar (to cut acidity)

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup heavy cream (or coconut milk for a dairy-free option)

1/2 cup fresh basil leaves, chopped

Fresh basil leaves for garnish (optional)

Croutons or grilled cheese for serving (optional)

Instructions
 

Sauté Aromatics:

    Set your Instant Pot to the 'Sauté' mode. Add olive oil and let it heat up. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.

      Add Remaining Ingredients:

        Switch off the 'Sauté' mode. Add the diced tomatoes (with their juices), vegetable broth, dried oregano, sugar, salt, and black pepper to the pot. Stir well to combine all the ingredients.

          Pressure Cook:

            Close the lid of the Instant Pot and set the valve to 'Sealing'. Select 'Manual' mode and set the cooking time to 10 minutes on high pressure.

              Release Pressure:

                Once the cooking time is up, do a quick release of the steam by carefully turning the valve to 'Venting'. Once all steam is released, open the lid.

                  Blend the Soup:

                    Using an immersion blender, purée the soup until smooth and creamy. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth, then return it to the pot.

                      Add Cream and Basil:

                        Stir in the heavy cream (or coconut milk) and chopped fresh basil into the soup. Allow it to heat through on the 'Sauté' mode for about 5 minutes, stirring occasionally. Adjust seasoning with additional salt and pepper, if needed.

                          Serve:

                            Ladle the creamy tomato basil soup into bowls. Garnish with extra fresh basil leaves and pair with croutons or a warm grilled cheese sandwich for a truly comforting meal.
