One-Pan Cheesy Broccoli and Rice Casserole

1 ½ cups uncooked long-grain white rice

4 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

1 cup heavy cream

¼ cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Start with Sautéing Vegetables: In a large skillet or oven-safe pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and the garlic is fragrant.

    Add Rice and Seasonings: Stir in the uncooked rice, smoked paprika, black pepper, and salt, mixing well to coat the rice with the flavors. Toast the rice for about 2 minutes by stirring continuously.

      Combine Broth and Cream: Pour in the vegetable broth and heavy cream, followed by the Dijon mustard. Stir until everything is evenly mixed. Bring the mixture to a light simmer, allowing it to cook for about 5 minutes.

        Incorporate Broccoli: Add the broccoli florets to the pan, folding them gently into the rice mixture to combine. Make sure the broccoli is evenly distributed.

          Cheesiness Time: Remove the pan from heat and stir in the shredded cheddar and mozzarella cheese until melted and well combined, reserving a small amount of each cheese for topping later.

            Bake the Casserole: Preheat your oven to 350°F (175°C). Sprinkle the reserved cheddar and mozzarella cheeses on top, followed by the grated Parmesan cheese. Transfer the pan to the oven and bake for 25-30 minutes until the cheese is bubbly and golden brown.
