4 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

Juice of 2 medium lemons

Zest of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 medium red bell pepper, chopped

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, thyme, paprika, salt, and pepper.

      Marinate Chicken: Place the chicken breasts in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Let it marinate for at least 20 minutes (or up to overnight in the refrigerator).

        Arrange in Pan: In a large oven-safe skillet or baking dish, arrange the marinated chicken breasts in a single layer. Place the halved cherry tomatoes, sliced zucchini, and chopped red bell pepper around the chicken.

          Drizzle & Bake: Drizzle any remaining marinade over the vegetables in the pan. Place the skillet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

            Broil for Finish (Optional): For a golden finish, after baking, switch to broil for an additional 3-5 minutes, keeping an eye on it to avoid burning.

              Serve: Once done, remove from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving. Enjoy your vibrant one-pan dish with your favorite grain or salad.
