1 cup long-grain white rice

1 can (15 oz) black beans, rinsed and drained

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (10 oz) diced tomatoes with green chilies

2 cups vegetable or chicken broth

1 tablespoon taco seasoning

1 teaspoon cumin

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

In a large skillet or pan over medium heat, add a splash of oil and sauté the diced onion and bell pepper until soft, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the ground beef or turkey to the pan, breaking it apart with a spatula. Cook until browned and fully cooked, about 7-8 minutes. Drain any excess fat if needed.

      Sprinkle the taco seasoning and cumin over the meat mixture, stirring well to combine.

        Add the rice, black beans, diced tomatoes with their juice, corn, and broth to the pan. Stir everything together, making sure the rice is submerged in the liquid. Season with salt and pepper to taste.

          Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

            Remove the lid and fluff the rice with a fork. Sprinkle the shredded cheese on top and cover again for a few minutes to melt the cheese.
