12 oz penne pasta

1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 can (14 oz) diced tomatoes (with juice)

3 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

Salt and pepper, to taste

1 cup fresh basil leaves, roughly chopped

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Additional basil leaves, for garnish

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and sauté for another minute until fragrant.
