Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and black pepper to taste

1/2 cup breadcrumbs (optional)

1 tbsp olive oil (optional, for breadcrumbs)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.

Cook the macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the cheese sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 1-2 minutes until bubbly.

Add milk and seasonings: Gradually whisk in the milk, stirring constantly to avoid lumps. Bring to a simmer and let it thicken, about 4-5 minutes. Add garlic powder, onion powder, paprika, salt, and pepper to taste.

Incorporate cheese: Remove the saucepan from heat and stir in the cheddar, mozzarella, and half of the Parmesan cheese until melted and smooth.

Combine macaroni and sauce: In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Stir until fully incorporated.

Prepare the casserole dish: Pour the mac and cheese mixture into a greased 9x13-inch casserole dish.

Topping (optional): If using breadcrumbs, mix them with olive oil in a small bowl and sprinkle evenly over the macaroni. Top with the remaining Parmesan cheese.

Bake the casserole: Place the casserole in the preheated oven and bake for 25-30 minutes, or until bubbly and golden on top.

Serve: Remove from the oven and let it cool for a few minutes. Scoop out portions and enjoy your delicious, creamy baked mac and cheese casserole!
