1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons sake (or dry sherry)

1 cup jasmine rice

2 cups water

Pinch of salt

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, sake, mirin, brown sugar, grated ginger, and minced garlic. Stir until the sugar is dissolved. Add the chicken pieces and ensure they are well coated. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for best flavor.

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and let simmer for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

      Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken along with the marinade.
