Ingredients

4 bone-in pork chops (about 1-inch thick)

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon paprika

2 tablespoons vegetable oil

1 large onion, thinly sliced

3 cloves garlic, minced

2 cups low-sodium chicken broth

1 cup milk

3 tablespoons all-purpose flour

2 tablespoons unsalted butter

1 teaspoon Worcestershire sauce

Fresh thyme or parsley, for garnish

Instructions

Prepare the Pork Chops: Season both sides of the pork chops generously with salt, black pepper, garlic powder, and paprika.

Sear the Chops: In a large skillet, heat the vegetable oil over medium-high heat. Add the pork chops to the skillet and sear them for about 4-5 minutes on each side, until browned. Remove the chops from the skillet and set them aside on a plate.

Sauté the Onions: In the same skillet, add the sliced onions. Cook them over medium heat, stirring occasionally, until they are caramelized and golden brown, about 8-10 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Create the Gravy Base: Sprinkle the flour over the onions and garlic, stirring to combine. Cook for another minute to toast the flour slightly. Gradually add the chicken broth and milk, stirring continuously to avoid lumps.

Blend in Seasonings: Stir in the Worcestershire sauce and bring the mixture to a gentle simmer. Season with additional salt and pepper to taste.

Combine and Simmer: Return the seared pork chops to the skillet, ensuring they are nestled in the onion gravy. Cover the skillet and reduce the heat to low. Let them simmer for 25-30 minutes until the pork chops are cooked through and tender.

Serve: Once cooked, remove the skillet from the heat. Garnish the dish with fresh thyme or parsley before serving. The pork chops can be served over mashed potatoes, rice, or noodles to soak up the delicious gravy.
