Spicy Roasted Veggie Tacos

1 medium zucchini, diced

1 bell pepper (red or yellow), chopped

1 cup corn (fresh or frozen)

1 small red onion, diced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large mixing bowl, combine the diced zucchini, chopped bell pepper, corn, red onion, and cherry tomatoes.

      Season the Veggies: Drizzle the olive oil over the vegetables and sprinkle with smoked paprika, chili powder, cayenne pepper, salt, and black pepper. Toss everything together until the veggies are evenly coated.

        Roast the Veggies: Spread the seasoned vegetables evenly on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly charred, stirring halfway through for even cooking.

          Warm the Tortillas: While the veggies are roasting, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and place them in the oven for the last 5-10 minutes of roasting.

            Assemble the Tacos: Once the veggies are roasted, remove them from the oven. Take a tortilla, place a generous spoonful of the roasted veggies in the center, add a few slices of avocado, and top with fresh cilantro.

              Serve: Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy your spicy roasted veggie tacos!
