1 block (14 oz) firm or extra-firm tofu

1/4 cup fresh parsley, finely chopped

1/4 cup fresh basil, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh rosemary, finely chopped

3 cloves garlic, minced

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup nutritional yeast

2 tablespoons olive oil, plus more for cooking

1 tablespoon balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Prepare the Tofu:

    Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel or paper towels and place a heavy object on top (like a cast iron skillet). Let it press for at least 30 minutes.

      Make the Herb Mixture:

        In a mixing bowl, combine the chopped parsley, basil, thyme, rosemary, minced garlic, breadcrumbs, nutritional yeast, olive oil, balsamic vinegar, salt, black pepper, and lemon juice. Mix well until you have a consistent herb crust mixture.

          Slice the Tofu:

            After the tofu has been pressed, cut it into thick slices (about 3/4-inch). You should have around 4-6 slices, depending on the size of the block.
