Ingredients

1 pound beef sirloin, thinly sliced

8 oz egg noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup beef broth

1 cup sour cream

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Cook the Egg Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Sauté for about 3-4 minutes until browned on all sides. Remove the beef from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the chopped onion and sliced mushrooms. Cook for about 5 minutes, stirring frequently, until the onions are translucent and the mushrooms are tender. Add the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients: Return the cooked beef to the skillet. Stir in the Worcestershire sauce, Dijon mustard, and beef broth. Let the mixture simmer for about 2-3 minutes, allowing the flavors to combine.

Add the Cream: Reduce the heat to low and stir in the sour cream until well combined. Continue to stir until warmed through, but do not let it boil to prevent the sour cream from curdling.

Mix with Noodles: Add the cooked egg noodles to the skillet and gently toss everything together until the noodles are evenly coated with the beef mixture.

Serve & Garnish: Plate the beef stroganoff and garnish with freshly chopped parsley. Enjoy your quick and savory meal!
