8 oz (about 225g) penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

½ cup heavy cream

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1 cup fresh basil leaves, chopped

¼ cup grated Parmesan cheese, plus extra for serving

Red pepper flakes (optional, for a touch of heat)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

      Make the Sauce: Pour in the crushed tomatoes and stir. Add the heavy cream and reduce the heat to low. If using, sprinkle in the sugar to balance the acidity, and season with salt and pepper. Stir well and let it simmer for about 5 minutes.

        Combine Pasta and Sauce: Add the cooked penne to the skillet with the sauce, tossing to fully coat the pasta. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.

          Add the Basil and Cheese: Stir in the chopped basil and grated Parmesan cheese, mixing everything until well combined. Taste and adjust the seasoning if necessary; add red pepper flakes if you like a little spice.
