8 oz linguine or spaghetti pasta

1 lb large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

1/2 cup cherry tomatoes, halved (optional)

1/4 cup grated Parmesan cheese (for serving, optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with salt, black pepper, and red pepper flakes (if using). Cook for about 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 30 seconds, until fragrant but not browned.

        Combine: Add the cooked pasta, shrimp, lemon zest, and lemon juice to the skillet. Toss everything together, adding reserved pasta water a little at a time to help create a smooth sauce. If using, add cherry tomatoes for added flavor and color.

          Finish and Serve: Stir in the chopped parsley and adjust seasoning if needed. Serve immediately, topped with grated Parmesan cheese if desired.
