30-Minute Teriyaki Salmon and Vegetable Stir-Fry

2 (6-ounce) salmon fillets

2 tablespoons teriyaki sauce (store-bought or homemade)

1 tablespoon soy sauce (low-sodium)

1 tablespoon olive oil

2 cups mixed vegetables ( broccoli, bell peppers, snap peas, and carrots are great choices)

1 teaspoon ginger, finely grated

2 cloves garlic, minced

1 tablespoon sesame seeds

2 green onions, sliced (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Marinade: In a small bowl, mix together the teriyaki sauce and soy sauce. Pour half of this mixture over the salmon fillets in a shallow dish and marinate for about 10 minutes.

    Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat. Once the oil is shimmering, add the minced garlic and grated ginger. Sauté for about 30 seconds or until fragrant.

      Cook the Salmon: Carefully place the marinated salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes per side, basting with the remaining teriyaki mixture, until the salmon is fully cooked and flakes easily with a fork. Remove from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the mixed vegetables. Stir-fry for 3-4 minutes until they are tender-crisp. You can cover the skillet for a minute to help steam the veggies while keeping them vibrant.

          Combine & Finish: Once the vegetables are done, add the cooked salmon back to the skillet. Pour any remaining teriyaki sauce over the salmon and veggies, tossing gently to combine all ingredients.

            Serve: Plate the stir-fry with a scoop of cooked rice or quinoa. Garnish with sesame seeds and sliced green onions for an extra pop of flavor and crunch.
