Hummus has a rich history that dates back thousands of years, with its roots traced to the Middle East. The word "hummus" itself comes from the Arabic word for chickpeas, which are the central ingredient in this creamy spread. While its exact origins are debated among various countries—such as Lebanon, Israel, and Turkey—hummus has become a symbol of culinary unity across the region. Each culture adds its unique twist, resulting in an array of regional variations.

Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil

1 tablespoon fresh lemon juice (about half a lemon)

1 clove garlic, minced

1/2 teaspoon ground cumin

Salt, to taste

Water, as needed (about 2-4 tablespoons)

Optional garnish: Paprika, olive oil drizzle, fresh parsley, or pine nuts

Instructions

In a food processor, combine the drained chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt.

Blend the mixture until smooth. If you prefer a creamier texture, add water slowly, one tablespoon at a time, while blending, until the desired consistency is reached.

Taste and adjust seasonings, adding more salt, lemon juice, or garlic according to your preference.

Once blended to perfection, transfer the hummus to a serving bowl.

For a touch of flair, garnish with a sprinkle of paprika, a drizzle of olive oil, or some chopped fresh parsley and pine nuts if desired.

Serve immediately with pita bread, fresh vegetables, or as a spread in sandwiches.
