2 medium zucchinis, sliced into 1/4-inch rounds

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (use panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

Cooking spray or olive oil for greasing

Prepare Zucchini: Rinse and dry the zucchinis, then slice them into 1/4-inch thick rounds. Pat the slices dry with paper towels to remove excess moisture.

    Make Coating Mixture: In a shallow bowl, combine the breadcrumbs, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until all dry ingredients are evenly distributed.

      Prepare Egg Wash: In another bowl, beat the egg until frothy. This will be used to help the coating stick to the zucchini.

        Coat Zucchini Slices: Dip each zucchini round into the egg, allowing excess to drip off, then roll it in the breadcrumb and cheese mixture, pressing gently to ensure an even coating. Place the coated rounds on a plate or tray.

          Preheat Air Fryer: Preheat the air fryer to 390°F (200°C) for about 5-7 minutes.

            Arrange in Air Fryer: Lightly spray the air fryer basket with cooking spray or brush it with olive oil. Arrange the coated zucchini rounds in a single layer in the air fryer basket, making sure they don’t touch for even crisping.

              Air Fry: Cook the zucchini rounds at 390°F (200°C) for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

                Serve: Once done, remove them from the air fryer and allow them to cool slightly. Serve hot as a delicious appetizer or side dish. Consider pairing with a marinara or ranch dipping sauce for extra flavor!
