Air Fryer Falafel Wraps

For the Falafel:

1 cup dried chickpeas (soaked in water overnight)

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper (optional)

1 teaspoon baking powder

Salt and pepper, to taste

2 tablespoons olive oil (for tossing)

For the Wrap:

4 whole wheat or pita wraps

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup hummus or tahini sauce (for spreading)

For Garnish:

Fresh mint leaves

Lemon wedges

Instructions
 

Prepare the Falafel Mixture:

    - After soaking the chickpeas, drain and rinse them. Place the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne (if using), salt, and pepper in a food processor. Pulse until a coarse mixture forms—do not overblend it; you want some texture.

      Form the Falafel Balls:

        - Transfer the mixture to a bowl, and stir in the baking powder. Using your hands, shape the mixture into small balls or patties (about 1.5 inches in diameter). You should have around 12-14 falafel balls.

          Preheat the Air Fryer:

            - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

              Cook the Falafel:

                - Lightly coat the falafel balls with olive oil (you can also mist them with an oil spray). Place them in the air fryer basket in a single layer (you may need to do this in batches). Cook for 12-15 minutes, flipping them halfway through, until they’re golden brown and crispy.

                  Assemble the Wraps:

                    - While the falafel are cooking, prepare your wraps. Spread a generous amount of hummus or tahini sauce on each wrap. Top with shredded lettuce, diced tomatoes, cucumber slices, and onion.

                      Add the Falafel:

                        - Once the falafel are ready, carefully place a few in each wrap.

                          Garnish and Serve:

                            - Add fresh mint leaves on top for extra flavor. Squeeze some lemon juice over everything for a zesty finish. Roll up the wraps tightly to enclose the filling, and slice in half if desired. Serve immediately.
