For the Falafel:

1 can (15 oz) chickpeas, drained and rinsed

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp cumin powder

1 tsp coriander powder

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

2-3 tbsp all-purpose flour (or chickpea flour for gluten-free)

For the Zesty Tahini Sauce:

1/4 cup tahini

2 tbsp lemon juice

1 clove garlic, minced

2-3 tbsp water (to thin)

Salt, to taste

For the Wraps:

4 whole wheat wraps or pita breads

Handful of fresh spinach or mixed greens

1 cup diced tomatoes

1 cup shredded cucumber

1/2 cup pickled red onions (optional)

Instructions
 

Prepare the Falafel Mixture: In a food processor, combine the chickpeas, chopped onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and cayenne pepper. Pulse until the mixture is coarse but well combined. If it's too wet, add flour gradually until the mixture holds together.

    Shape the Falafel: Use your hands to form balls or patties (about 1.5 inches in diameter) with the mixture. Place them on a plate.

      Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

        Air Fry the Falafel: Lightly spray the falafel with cooking oil or brush lightly with oil. Place the falafel in the air fryer basket in a single layer, ensuring they are not touching each other. Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.

          Make the Zesty Tahini Sauce: In a small bowl, whisk together tahini, lemon juice, minced garlic, and salt. Gradually add water until you achieve your desired consistency — it should be creamy but pourable.

            Assemble the Wraps: Lay out the wraps and place a handful of greens in the center of each. Add 2-3 falafel balls, diced tomatoes, shredded cucumber, and pickled red onions if using. Drizzle generously with the zesty tahini sauce.

              Wrap It Up: Fold the sides of the wrap inward and roll from the bottom up to enclose the filling. Secure with a toothpick if needed.
