2 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1/4 cup sour cream

3 large apples (e.g., Granny Smith or Honeycrisp), peeled and diced

1/2 cup brown sugar

1 tablespoon lemon juice

1 teaspoon cinnamon

For the Crisp Topping:

1 cup old-fashioned oats

1/2 cup all-purpose flour

1/2 cup brown sugar

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/3 cup cold butter, diced

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C). Lightly grease a 9-inch springform pan.

      - In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of the prepared springform pan to create an even crust. Set aside.

        Make the Apple Layer:

          - In a large bowl, toss the diced apples with brown sugar, lemon juice, and cinnamon until they are well coated. Set aside while you prepare the cheesecake layer.

            Prepare the Cheesecake Layer:

              - In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy.

                - Add the vanilla extract and mix well, followed by the eggs one at a time, ensuring each is fully incorporated before adding the next. Finally, mix in the sour cream until everything is combined.

                  Assemble the Cheesecake:
