For the Flaky Crust:

2 ½ cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and cubed

6-8 tablespoons ice water

For the Apple Filling:

6-8 medium-sized apples (use a mix of Granny Smith and Honeycrisp for best flavor)

¾ cup granulated sugar

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

2 tablespoons all-purpose flour

1 tablespoon lemon juice

1 teaspoon vanilla extract

For Assembly:

1 egg, beaten (for egg wash)

Sugar for sprinkling

Instructions
 

Make the Flaky Crust:

    - In a large bowl, whisk together the flour, salt, and sugar.

      - Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs with some pea-sized pieces remaining.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork it.

          - Divide the dough into two halves, shape them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the Apple Filling:

              - Preheat your oven to 425°F (220°C).

                - Peel, core, and thinly slice the apples. In a large bowl, combine the apple slices with sugar, cinnamon, nutmeg, flour, lemon juice, and vanilla. Toss until the apples are well-coated.

                  Roll Out the Dough:

                    - On a floured surface, roll out one disc of chilled dough to fit your pie dish (about 12 inches in diameter). Transfer it to the dish and trim the edges.

                      - Fill the crust with the apple mixture, spreading it evenly.

                        Add the Top Crust:

                          - Roll out the second disc of dough. You can create a full crust or lattice design.

                            - If making a lattice top, cut the dough into strips and weave them over the apples. Otherwise, place the whole rolled-out dough on top and cut slits for steam to escape.

                              - Trim and crimp the edges to seal.

                                Finish the Pie:
