Asparagus Pasta

12 oz linguine or spaghetti

1 lb fresh asparagus, trimmed and cut into 2-inch pieces

3 tbsp olive oil

3 cloves garlic, minced

1/2 tsp red pepper flakes (adjust for spice preference)

1 lemon (zested and juiced)

1/2 cup grated Parmesan cheese (plus more for serving)

1/4 cup heavy cream (optional for creaminess)

Salt and freshly cracked black pepper to taste

1/4 cup fresh basil, chopped (for garnish)

1/4 cup pine nuts, toasted (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Sauté the Asparagus: While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the asparagus pieces and sauté for about 3-4 minutes until just tender and vibrant green, then add the minced garlic and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Once the asparagus is cooked, reduce heat to low. Add the drained pasta to the skillet, followed by the lemon juice, lemon zest, and reserved pasta water. If you prefer a creamier dish, pour in the heavy cream now. Toss everything together until well combined.

        Season: Stir in the Parmesan cheese, and season with salt and freshly cracked black pepper to taste. Adjust the consistency with more pasta water if needed.

          Serve: Remove from heat and drizzle the remaining olive oil over the pasta. Serve immediately, garnished with fresh basil, toasted pine nuts, and extra Parmesan cheese as desired.
