2 ripe avocados

1 cup cherry tomatoes, halved

1/2 cup cooked quinoa

1/4 cup corn kernels (fresh, frozen or canned)

1/4 cup black beans, rinsed and drained

1/4 cup crumbled feta cheese or dairy-free alternative

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and black pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Prepare the Avocados: Cut the avocados in half and carefully remove the pit. Use a spoon to scoop out a little more flesh from the center to create a deeper boat. Chop the removed avocado flesh into small pieces and set aside.

    Mix the Filling: In a mixing bowl, combine the cherry tomatoes, cooked quinoa, corn, black beans, chopped avocado flesh, and feta cheese. Drizzle with olive oil and lime juice, then sprinkle with garlic powder, salt, and black pepper. Gently toss the mixture until well combined.

      Stuff the Avocados: Spoon the filling mixture into each avocado half, generously packing it in. Make sure to mound it a bit on top for a nice presentation.
