2 cups cooked chicken, shredded (rotisserie chicken works great)

1 ripe avocado, peeled and pitted

1/4 cup Greek yogurt (or mayonnaise for a richer taste)

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt (more to taste)

1/4 teaspoon black pepper

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro or parsley, chopped (optional)

1/2 teaspoon chili powder (optional, for a bit of kick)

Lettuce leaves or whole grain bread for serving

Instructions
 

In a large mixing bowl, mash the avocado with a fork until creamy, leaving some small chunks for texture.

    Add the Greek yogurt, Dijon mustard, lime juice, garlic powder, onion powder, salt, black pepper, and chili powder (if using) to the mashed avocado. Mix until well combined.

      Fold in the shredded chicken to the avocado mixture, ensuring that all the chicken is well coated and mixed.

        Add the chopped celery, red onion, and cilantro/parsley (if using) to the bowl. Gently stir to incorporate all ingredients without mashing the chicken.

          Taste the salad and adjust seasoning if necessary, adding more salt or lime juice according to your preference.

            Chill in the refrigerator for about 30 minutes before serving to allow flavors to meld.
