2 cups cooked chicken breast, shredded

1 ripe avocado, mashed

1/4 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

4 large whole wheat or spinach tortillas

Lettuce leaves for wrapping

Optional: diced tomatoes or cucumber for added crunch

Instructions
 

In a large mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt, Dijon mustard, and fresh lemon juice. Stir until the mixture is well blended and creamy.

    Add the finely chopped celery, red onion, and cilantro to the chicken mixture. Mix gently to combine. Season with salt and pepper to taste.

      Lay out the large tortillas on a clean surface, and place a few lettuce leaves in the center of each wrap.

        Spoon a generous amount of the avocado chicken salad mixture onto each tortilla, and if desired, top with diced tomatoes or cucumber for extra crunch.

          Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito-like wrap.
