Avocado Tuna Lettuce Boats

2 ripe avocados, halved and pitted

1 can (5 oz) of tuna in water, drained

2 tablespoons mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 small celery stalk, finely chopped

2 tablespoons red onion, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

4 large romaine or butter lettuce leaves

Optional: cherry tomatoes, sliced, for garnish

Instructions
 

Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, mayonnaise (or Greek yogurt), Dijon mustard, and lemon juice. Mix until well combined.

    Add Vegetables: Fold in the finely chopped celery, red onion, and dill into the tuna mixture. Season with salt and pepper to taste.

      Prep the Avocados: Scoop out a small amount of avocado flesh from each half to create a larger cavity for the tuna mixture (you can mash this avocado and mix it in with the tuna if desired for extra creaminess).
