1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 medium zucchini, diced

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 tsp paprika

1 tsp Italian seasoning

Salt and pepper to taste

1 cup cooked rice or quinoa (optional, for serving)

Fresh basil or parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prep the Chicken: Season the bite-sized chicken pieces with paprika, Italian seasoning, salt, and pepper.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat.

      Cook the Chicken: Add the seasoned chicken to the skillet and sauté for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove from the skillet and set aside.
