4 large whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup mixed bell peppers, diced (red, yellow, and green)

1 cup corn kernels (fresh or frozen)

1 small red onion, finely chopped

1 zucchini, grated

1 teaspoon chili powder

1 teaspoon cumin

1 tablespoon olive oil

1/2 cup fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Salsa or pico de gallo (for dipping)

Salt and pepper to taste

Instructions
 

Preparation: Begin by washing and chopping all vegetables. If using frozen corn, measure it out in advance.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the red onion and sauté for about 2 minutes until softened. Then add the mixed bell peppers, corn, and grated zucchini. Sauté for another 5 minutes, stirring occasionally until vegetables are tender.

      Spice it Up: Sprinkle in the chili powder, cumin, salt, and pepper. Stir well to combine and let cook for an additional 2 minutes. Remove from heat and set aside.

        Assemble the Quesadillas: On one half of each tortilla, sprinkle a generous layer of mozzarella and cheddar cheese. Then top with a portion of the vegetable mixture, followed by another layer of cheese. Fold the tortilla over to create a half-moon shape.

          Cook the Quesadillas: In the same skillet (wiped clean), add a little more olive oil if needed and heat over medium heat. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with remaining tortillas.

            Serve: Once cooked, remove from skillet and let cool for a minute before slicing into wedges. Garnish with fresh cilantro and serve with sour cream or Greek yogurt and salsa for dipping.
