Bacon Corn Avocado Salad

Ingredients
  

4 medium ripe avocados, diced

6 slices of thick-cut bacon, cooked until crispy and crumbled

2 cups fresh corn kernels (or 1 can of corn, drained)

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 jalapeño, finely diced (for heat)

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the pan and let it cool on paper towels. Once cooled, crumble the bacon into bite-sized pieces.

    Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn kernels for about 3–5 minutes until tender, then drain and cool under cold water. If using canned corn, simply drain and rinse.

      Mix the Veggies: In a large bowl, combine the diced avocados, corn, cherry tomatoes, red onion, and fresh cilantro.

        Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, and a pinch of salt and pepper. If you like heat, add in the diced jalapeño here.

          Combine Ingredients: Pour the dressing over the salad mixture and gently toss to combine all the ingredients without mashing the avocado.

            Add Bacon: Fold in the crumbled bacon, reserving a little for garnish if desired.

              Taste and Adjust: Taste the salad for seasoning. Add more salt, pepper, or lime juice as needed.

                Serve: Transfer the salad to a serving bowl or platter, garnish with reserved bacon, and serve immediately. Enjoy!
