Bacon Mac and Cheese Bites

2 cups elbow macaroni

4 cups shredded sharp cheddar cheese

1 cup cooked and crumbled bacon (about 8 slices)

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs

Cooking spray or oil for greasing the muffin tin

Optional: chopped chives or parsley for garnish

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2 minutes, stirring constantly until it turns a light golden color. Gradually whisk in the milk, continuing to stir to avoid lumps.

      Make it Cheesy: Allow the mixture to come to a simmer, then add the garlic powder, onion powder, paprika, salt, and black pepper. Stir in the shredded cheddar cheese until melted and smooth.

        Combine: Add the cooked macaroni and crumbled bacon to the cheese sauce. Mix until well combined.

          Preheat Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil to prevent sticking.

            Fill Muffin Tin: Spoon the macaroni cheese mixture into each muffin cup, filling it to the top.
