4 medium zucchinis

1 cup cooked chicken, shredded (preferably rotisserie chicken)

1/2 cup barbecue sauce (choose your favorite)

1 cup shredded cheddar cheese

1/2 cup red bell pepper, finely chopped

1/4 cup green onions, sliced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini Boats: Slice the zucchinis in half lengthwise. Using a spoon, scoop out the center of each half to create a boat, leaving about 1/4 inch of flesh intact to support the filling. Arrange the zucchini boats on a baking sheet.

      Mix Filling: In a large bowl, combine the shredded chicken, barbecue sauce, chopped red bell pepper, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well coated.

        Fill Zucchini Boats: Spoon the BBQ chicken mixture evenly into each zucchini boat. Pack it in gently but firmly to make sure it holds together.

          Top with Cheese: Sprinkle shredded cheddar cheese generously over the filled zucchini boats.
