Baked Cabbage Nest Burgers

1 medium green cabbage (about 2 lbs)

1 lb ground turkey or chicken

1/2 cup breadcrumbs (or gluten-free alternative)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 large egg

1/2 cup shredded cheese (cheddar or mozzarella), optional

Your choice of burger toppings (lettuce, tomato, avocado, etc.)

Condiments (ketchup, mustard, mayo, etc.)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cabbage: Cut the bottom of the cabbage to create a flat base. Remove the outer leaves carefully and set them aside. You’ll need about 12 medium-sized leaves.

      Blanch the Leaves: Bring a large pot of salted water to a boil. Blanch the cabbage leaves in the boiling water for about 2-3 minutes until they are slightly softened. Remove and place them in a bowl of ice water to cool. Drain and pat them dry with paper towels.

        Make the Burger Patties: In a mixing bowl, combine ground turkey (or chicken), breadcrumbs, Parmesan cheese, minced garlic, onion powder, smoked paprika, oregano, salt, pepper, and egg. Mix until everything is well incorporated. Form the mixture into 4-6 patties, depending on your preferred size.

          Construct the Cabbage Nests: On the prepared baking sheet, arrange the blanched cabbage leaves in a circle, overlapping slightly to create a nest shape. Ensure that the leaves form a stable base to hold the burgers.

            Cook the Patties: Place the formed burger patties in the center of each cabbage nest. Optionally, sprinkle shredded cheese on top of the patties for extra flavor.

              Bake: Bake in the preheated oven for 20-25 minutes or until the turkey is cooked through, reaching an internal temperature of 165°F (74°C) and the cabbage edges are crispy and golden.
