Ingredients

For the Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian-style)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg, beaten

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

For the Sauce:

1 cup marinara sauce (store-bought or homemade)

1/2 tsp red pepper flakes (optional for heat)

For Assembly:

4 hoagie/sub rolls

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Meatballs: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, beaten egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined – avoid overmixing to keep the meatballs tender.

Shape the Meatballs: Form the mixture into evenly sized meatballs, about 1-1.5 inches in diameter. Place them on a baking sheet lined with parchment paper, ensuring they are spaced apart.

Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.

Prepare the Sauce: While the meatballs are baking, heat the marinara sauce in a small saucepan over medium heat. Add red pepper flakes if you like a bit of heat. Let it simmer gently.

Assemble the Subs: Once the meatballs are cooked, remove them from the oven. In the same baking sheet, pour half of the marinara sauce over the meatballs and sprinkle shredded mozzarella cheese evenly over the top.

Melt the Cheese: Return the meatballs to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and golden.

Prepare the Rolls: While the meatballs are in the oven, lightly toast the hoagie rolls in another oven, if desired.

Build the Subs: To assemble, place several meatballs onto each toasted hoagie roll. Drizzle with remaining marinara sauce and garnish with fresh basil leaves, if desired.

Serve and Enjoy: Serve the baked chicken parm meatball subs warm, paired with a side salad or crispy fries!
