Baked Cinnamon French Toast Muffins

6 slices of day-old bread (white, brioche, or challah), cubed

4 large eggs

1 cup milk (whole or almond)

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

Pinch of salt

1/2 cup maple syrup (for drizzling)

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

Powdered sugar (for dusting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

    Prepare the Bread: In a large mixing bowl, place the cubed bread and set aside.

      Whisk Ingredients: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if using), and a pinch of salt until well combined.

        Combine: Pour the egg mixture over the cubed bread, gently folding with a spatula to ensure all pieces are soaked. If desired, fold in the nuts or chocolate chips at this stage.

          Fill Muffin Tin: Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

              Cool and Serve: Remove from the oven and allow them to cool for about 5 minutes. Carefully run a knife around the edges and remove the muffins from the tin.

                Garnish: Serve warm, drizzled with maple syrup and a dusting of powdered sugar if desired.
