Baked Creamy Spinach and Cheese Dip Casserole

2 cups fresh spinach, chopped

1 cup frozen spinach, thawed and drained

1 cup cream cheese, softened

1 cup sour cream

1/2 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1/2 cup diced sun-dried tomatoes (or roasted red peppers for a twist)

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil (for sautéing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the fresh and thawed spinach and cook for about 3-4 minutes until wilted. Remove from heat and let it cool slightly.

      Mix Base Ingredients: In a large bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth and well combined.

        Add Seasoning: Stir in the garlic powder, onion powder, red pepper flakes (if using), and season with salt and pepper to taste.

          Incorporate Cheeses: Fold in the shredded mozzarella, grated Parmesan, sautéed spinach, and diced sun-dried tomatoes until everything is well incorporated.
