Ingredients

2 cups cooked chicken, shredded or diced (use rotisserie chicken for convenience)

1 large bell pepper (any color), sliced

1 medium onion, sliced

2 teaspoons fajita seasoning (store-bought or homemade)

1 tablespoon olive oil

8 oz tortilla chips

1 ½ cups shredded cheddar cheese (or a mix of cheese such as Monterey Jack)

1 cup black beans, drained and rinsed

1 medium jalapeño, sliced (optional for heat)

½ cup sour cream (for serving)

½ cup guacamole (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the sliced onion and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened. Add the fajita seasoning and stir well to coat the veggies. Cook for another minute until the spices are fragrant. Remove from heat.

Layer the Nachos: On a large baking sheet, spread out the tortilla chips in an even layer. Start layering by adding the cooked chicken evenly over the chips. Follow with the sautéed peppers and onions, then sprinkle the black beans over the top.

Cheese It Up: Generously sprinkle the shredded cheddar cheese over the nacho layers. If you're using jalapeño slices for an added kick, sprinkle them on top of the cheese.

Bake: Place the baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Once out of the oven, let the nachos cool for a couple of minutes. Garnish with chopped fresh cilantro and serve hot with sour cream, guacamole, and lime wedges on the side.

Enjoy a delicious and hearty serving of Baked Fajita Chicken Nachos that’s sure to please any crowd!
