Ingredients

8 ounces elbow macaroni

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1/2 cup Parmesan cheese, grated

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

1/4 teaspoon paprika (for garnish)

Fresh parsley for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Cook Pasta: In a large pot of salted boiling water, cook the macaroni according to package instructions until al dente. Drain and set aside.

      Make Cheese Sauce:

        - In a medium saucepan, melt the butter over medium heat.

          - Stir in the flour and cook for about 1-2 minutes, stirring continuously until smooth and bubbling (this is your roux).

            - Gradually whisk in the whole milk until fully combined. Continue whisking until the mixture thickens, about 5-7 minutes.

              - Stir in the Dijon mustard, garlic powder, onion powder, salt, and pepper. Make sure to taste and adjust seasoning as necessary.

                - Remove from heat and add the grated sharp cheddar and mozzarella, stirring until the cheese melts and the sauce is creamy.

                  Combine Pasta and Sauce:

                    - In a large bowl, combine the cooked macaroni with the cheese sauce, mixing well to coat all the pasta.

                      Prepare Breadcrumb Topping:

                        - In a separate bowl, combine the panko breadcrumbs with olive oil, mixing until breadcrumbs are evenly coated. Stir in paprika for color and flavor.

                          Assemble and Bake:

                            - Transfer the mac and cheese mixture to a greased 9x13 inch baking dish.

                              - Evenly sprinkle the breadcrumb mixture over the top of the mac and cheese.

                                Bake:

                                  - Bake in the preheated oven for 25-30 minutes, or until the breadcrumbs are golden brown and crispy.

                                    Serve:

                                      - Let cool slightly before serving. Garnish with fresh parsley if desired. Enjoy your delicious baked mac and cheese!
