Baked Peach Meatballs

1 lb ground chicken or turkey

1 cup fresh peaches, finely chopped

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)

1 egg, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1 cup peach preserves (for sauce)

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken or turkey, chopped peaches, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, fresh basil, egg, salt, pepper, and smoked paprika. Mix thoroughly until all ingredients are well incorporated.

      Form the Meatballs: Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them evenly spaced on the prepared baking sheet.

        Make the Peach Sauce: In a small saucepan, combine the peach preserves, soy sauce, and apple cider vinegar. Heat over medium heat, stirring occasionally, until the mixture is smooth and slightly thickened. Remove from heat.

          Bake the Meatballs: Place the meatballs in the preheated oven and bake for 20-25 minutes, or until cooked through and lightly golden brown.

            Glaze with Peach Sauce: In the last 5 minutes of baking, remove the meatballs from the oven and brush them generously with the peach sauce. Return to the oven for the remaining time.

              Serve: Once done, remove the meatballs from the oven and let them cool slightly. Arrange them on a platter or serve them over rice or pasta. Drizzle with any remaining peach sauce and garnish with fresh basil if desired.
