Ingredients

4 salmon fillets (about 6 ounces each)

1/2 cup mayonnaise

1 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko preferred for extra crunch)

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Salmon: Pat the salmon fillets dry with a paper towel and place them skin-side down on the prepared baking sheet. Season lightly with salt and pepper.

Make the Herb Mayo Mixture: In a medium bowl, combine the mayonnaise, grated Parmesan cheese, breadcrumbs, chopped parsley, chopped dill, garlic powder, onion powder, salt, black pepper, and lemon juice. Mix well until all ingredients are well incorporated.

Coat the Salmon: Generously spread the mayo mixture over the top of each salmon fillet, ensuring an even coating to form a crust.

Bake the Salmon: Transfer the baking sheet to the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked through (internal temperature should reach 145°F/63°C) and the crust is golden brown and crispy.

Serve: Remove the salmon from the oven and let it rest for a couple of minutes. Serve hot with lemon wedges on the side for an extra zing.
